INTRODUCTIONFood is vital to life and well-being. It may be defined as any solid or liquid substance which when consumed provides the necessary materials or nutrients to enable the body to grow, replace worn-out and damaged parts and to function optimally. The intimate life sustaining relationship between food and man is called nutrition. One way of ensuring that health and fitness are maintained is to have an understanding of food and its benefits and to use this knowledge to prevent common life style diseases such as diabetes. Diabetes mellitus is a group of serious and chronic disorders affecting the metabolism of carbohydrates. It affects 150 million people worldwide and this number is predicted to double by the year 2025. Diabetes is a preventable or controllable disorder but if allowed to go unabated and untreated can contribute to premature deaths, blindness, infections, amputations and loss of valuable human potential.
